Ultimate Strawberry Banana Bread

So I’ve been meaning to write a cookbook for awhile but always seem to have work, distractions or other ideas crop up before the chance. Well that’s slowly changing now. I have broken ground on my cookbook and to celebrate I’m sharing the very first recipe in the book with everyone who reads my little blog.

It’s interchangeable as a sugarfree recipe too so read it, try it and enjoy the tastiness below.

Chocolate Strawberry Banana Bread 

Ingredients

  • 1 cup brown sugar
  • 8 tablespoons (1 stick) salted butter, room temperature
  • 2 large eggs
  • 2 bananas
  • 10 large ripe strawberries
  • 1 tablespoon milk
  • 1 teaspoon ground cinnamon
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 squares Hershey’s baking chocolate
Directions
  1. Preheat the oven to 325 degrees F. Butter a 9 x 5 x 3 inch loaf pan.
  2. Mix the butter and sugar in a large mixing bowl until fluffy. Add eggs one at a time thoroughly beating until mixed.
  3. In a food processor add in the strawberries and a pinch of nutmeg (optional). Mix lightly until all strawberries are chopped.
  4. In a large bowl mash the bananas with a fork. Add in Milk and cinnamon.
  5. Using a microwave safe bowl melt the baking chocolate and add it to the banana mixture.
  6. Add in the mixed strawberries to the bananas and stir until fully combined.
  7. In a large measuring cup mix together the flour, baking powder & baking soda.
  8. Add dry ingrediants to fruit mix until flour is fully mixed in.
  9. Pour into loaf pan and bake for an hour and 15 minutes. Check with a toothpick to make sure center is done.
  10. Set aside to cool on a rack for 15 minutes before removing loaf from pan.
  11. Serve with fresh strawberries and butter.
